Jax' Recipe Modifications:
*You can use water instead of broth (I generally do 1/2 water, 1/2 broth)
*I substitute 1 C brown & wild rice mix for the potatoes (I get the Costco "Harvest Medley" container of rice/3.2 lbs.)
*The veggies I usually use are carrots, corn, celery, onions & garlic
*I generally use a can of chopped tomatoes and a can of V8
*I usually omit the rest of the veggies
*Sometimes I add red bell pepper instead of green if I have it (don't like green so much)
My family loves this soup. Try it sometime. The peanut butter may throw you, but it actually adds a very desirable flavor. And people usually can't guess that there is any peanut butter in it.
